Vigan miki (fresh egg noodle soup, Vigan City style)



Home-made egg noodles
I used the recipe here to make the egg noodles.
Recipe for the noodle soup
2 cups fresh egg noodles
3 cups water or chicken broth
1 cup boiled chicken, shredded
2 pieces med sized carrots, sliced
1 sm size celery, chopped
annatto seed extract for coloring (optional, but needed for a genuine Vigan miki)
salt
pepper
1. Boil 3 cups of water or chicken broth. Add fresh egg noodles once water is brought to a running boil.
2. Once noodles are firm to taste, add shredded chicken.
3. Add annatto seed extract. Cook for about 5 mins.
4. Add carrots and celery.
5. Salt to taste. Sprinkle with pepper.
6. Serve hot.
Serves 4-6.
